Roasted Strawberries

I’ve been desperate to create some roasted strawberries recently! It’s the time of year when British strawberries are deliciously sweet, plump and juicy. I just can’t wait to get them into some bakes! I really wanted to bring out the sweetness of the berries here. So what better way than to roast them, creating a caramelised syrup with their juices.

The recipe is ridiculously simple. The roasted strawberries can then be added to cake mix, buttercream, or on top of scones. My particular favourite is on some Greek yoghurt for breakfast.

Servings: 6

Ingredients:

  • 400g punnet of strawberries

  • juice of 1/2 lemon

  • 1 tbsp sugar (of your choice)

Instructions:

  1. Preheat oven to 160 degrees C fan

  2. Line a baking tray with baking paper

  3. Slice the strawberries in half and add to tray

  4. Squeeze the juice form half a lemon over the strawberries

  5. Sprinkle the sugar over the top and gently mix

  6. Roast for 30 minutes, stirring every 10 minutes during roasting

  7. Remove from the oven and allow to cool to room temperature
