Double Chocolate Doughnuts

Even though it’s been one of the hottest weeks of the year it hasn’t escaped me that the evenings arrive quicker, the night air is misted and the leaves are turning. I find so much inspiration from nature and it definitely drives my creative side. I’d also received some awesome new backdrops so was desperate to take them for a test drive!

I first created this recipe for some lemon poppyseed doughnuts but this week just felt like chocolate was in order. To make these a little healthier I used raw cacao and oat milk instead of traditional dairy options but you can use normal cocoa powder and cow’s milk in yours. I love oat milk at the moment, it has such a beautiful earthy taste.

They are also super easy to make and take only about 10 minutes in the oven so you can tuck in sooner!

I used a Wilton 6 holed doughnut pan so I baked them in two rounds. Just a note the little doughnuts are very fragile once straight out of the oven so handle them gently until they’re cooled.

Double Chocolate Doughnuts

Ingredients:

  • 140g softened butter

  • 140g caster sugar

  • 1 large egg

  • 140g plain flour

  • 15g raw cacao powder

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • pinch of salt

  • 90ml oat milk

  • 100g white chocolate

  • handful of cacao nibs to decorate

Instructions:

  1. Preheat the oven to 180 degrees C fan assisted

  2. Grease a doughnut baking pan with a little butter

  3. Using a stand or hand mixer beat together the softened butter and caster sugar until softened

  4. Add the egg and mix again

  5. Add the flour, cacao powder, salt and baking powder and gently combine

  6. Pour in the milk and vanilla extract and fully mix together

  7. Fill the piping bag and gently pipe circles of the mixture into the doughnut pan

  8. Bake for 10-12 minutes. Test them when the mix has come away from the sides of the pan

  9. Tip the pan upside down onto a cooling rack, remove the pan once the doughnuts are removed and allow to cool

  10. Melt the white chocolate in the microwave in 10 second intervals to avoid burning

  11. Dip the doughnuts individually into the melted white chocolate and place back on the cooling rack

  12. Sprinkle with cacao nibs and enjoy!
