Plum and Ginger Cobbler

We have some amazing neighbours down our lane - a fresh delivery of fruit and veg can be found weekly on the doorstep when we arrive home, which is such a treat! This week we received the most ripe and juicy plums. The kids tucked in immediately but I managed to keep some back to create this recipe!

I was inspired by this month’s Waitrose magazine to create this cobbler - we make crumbles throughout the week during the apple harvest here so I was intrigued by the slightly different topping. And what could be more magical with plums than fresh ginger? The tang of the ginger pairs perfectly with the sweet stone fruit.

I adore most puddings with Cornish clotted cream but custard, pouring cream or vanilla ice cream would all be amazing with this pud. Especially great for those who aren’t a fan of over-sweet or sickly desserts this will surely be a winner on the Sunday dinner table.

Plum and Ginger Cobbler

Servings: 8

Ingredients:

  • 600g plums, sliced into quarters and stones removed

  • 25g fresh ginger, grated

  • juice of 1 lemon

  • 100g soft light brown sugar

  • 250g self raising flour

  • 85g ground almonds

  • 150g chilled salted butter, cubed

  • 1/2 tsp ground ginger

Instructions:

  1. Preheat the oven to 180 degrees C fan assisted

  2. Place the plum quarters, lemon juice, grated ginger and 50g of the soft light brown sugar into a casserole or pie dish, gently mix and bake for 15 minutes

  3. Whilst the fruit is softening in the oven, add the butter, flour, ground almonds and ground ginger to a food processor and pulse to create a breadcrumb texture. Alternatively place them in a large bowl and gently rub with your fingers until a similar texture is formed

  4. Add the remaining sugar and stir in

  5. Add a little water to the mix - 2 tbsp is usually sufficient - and bring together to form a dough ball with your hands

  6. Remove the plums from the oven

  7. Create 8 round balls from the dough, gently flatten slightly then place on top of the fruit

  8. Return the dish to the oven and bake for 25-30 minutes until the fruit syrup is bubbling and the top is golden

  9. Serve with your favourite topping - ice cream, custard or cream all work well
