Fig + Walnut Banana Cake

Every time I go to the shops I see these beautiful figs and I've been longing to create a recipe with them! Cakes made with banana have such a wonderfully moist crumb and melt in the mouth texture. 

With the added walnuts and figs you get that added layer of crunch which is amazing next to the sponge.

I've used honey and spices here too to really give it that warm, autumnal feel!

Add your choice of topping - here I've used a light cream cheese frosting and added crunch walnuts and juicy figs to decorate. Sliced with a little salted butter would also be a wonderful mid morning treat.

Fig and Walnut Banana Cake

Ingredients:

Cakes

  • 200g butter, softened

  • 250g soft light brown sugar

  • 1 ripe medium banana, mashed

  • 2 large eggs

  • 2 tbsp honey

  • 250g self raising flour

  • 1/2 tsp cinammon

  • 1/2 tsp ground nutmeg

  • 65g chopped walnuts

  • 3 figs, chopped into 1cm cubes

Icing

  • 190g butter, softened

  • 400g icing sugar

  • 180g cream cheese

Instructions:

  1. Pre heat the oven to 180 degrees C fan assisted. Grease and line two 8 inch loose bottomed cake tins

  2. Cream the butter and sugar together until light and fluffy

  3. Add the mashed banana, eggs and honey and combine

  4. Add the flour, cinammon and nutmeg and whisk until silky smooth

  5. Gently stir in the walnuts and figs until evenly distributed throughout the batter

  6. Pour or spoon the cake batter equally between the two lined cake tins and bake in the centre of the preheated oven for 35 minutes or until an inserted skewer comes out clean

  7. Once baked remove from the oven and tins and leave to cool completely

  8. For the icing, whisk together the butter and icing sugar until fully combined

  9. Add the cream cheese to the mix and whisk again until there are no lumps and the icing is a silky texture

  10. Once the cakes have cooled spoon the icing generously on the bottom cake layer and place the second layer on top

  11. Again generously ice the top of the cake then decorate with a handful of chopped walnuts and quartered figs
