Apple + Blackberry Crumble Bars

We are a household of crumble lovers. Or I should say my husband is. Late summer and early autumn are literally his favourite as he knows that at least one crumble or two will be in the house at any time! We have a beautiful Bramley apple tree in the garden which has been so generous with its crop this year so I’ve been experimenting with different flavours. And what could be more synonymous with early autumn than blackberries?

It’s also not always convenient to serve a bit of crumble in a bowl - sometimes you get home and just need sugar, in your mouth, right now, you know what I mean? And that’s where these delicious little crumble bars come in! By using the crumble on the base as well as a topping, and packing it in tightly you can grab a bar, eat on the run, sugar levels restored, high five. If you don’t have a food processor you can also make the crumble topping in a bowl and gently create the breadcrumb texture using your fingertips.

Apple + Blackberry Crumble Bars

Servings: 9

Ingredients:

  • 175g plain flour

  • 100g chilled butter, cubed

  • 100g demerara sugar

  • 100g porridge oats

  • 200g apples

  • 100g blackberries

  • 1/2 tsp cinnamon

  • 1/2 tsp ground cloves

  • 1/2 tsp ground nutmeg

Instructions:

  1. Preheat the oven to 180 degrees C fan assisted and line a 9" square brownie tray with non-stick baking paper

  2. Cut the apples into small 1cm cubes and place into a large bowl

  3. Add the blackberries, cinnamon, ground cloves and ground nutmeg to the apples and gently mix

  4. In a food processor add the chilled butter, demerara sugar and plain flour and blitz until a breadcrumb texture is formed

  5. Add the porridge oats and blitz again

  6. Pack two thirds of the crumble topping into the base of the brownie tray. Pack it down tightly.

  7. Add the apple and blackberry mix onto the first layer of crumble topping

  8. Add the final third of the crumble topping over the fruit and gently press down

  9. Gently sprinkle with a little extra demerara sugar and place in the oven for 35-40 minutes

  10. When baked leave to cool then slice into 9 equal squares

  11. Eat cool or warmed with a little cream or custard!
