Honey Chicken Flatbreads
This summer we’re finally doing something we’ve been wanting to get back into for years - camping. And not just any old camping - but the real family, back to basics in the wild enjoying nature kind of camping. And that got me thinking - as someone who enjoys cooking so much, what was I going to prepare for our family of five to eat?
The idea of cooking over fire or outside really appeals to me so I set about planning some easy recipes that you can recreate when on the road, camping or even at home to enjoy in the garden. And the best part is they’re all super easy, using store cupboard staples, jars and tins alongside fresh ingredients that can be sourced locally or will keep well if stored in a refrigerator or cool box. And cheating by bringing pre-prepared items is absolutely allowed!
First up is a meal we have weekly, although the main ingredients change regularly according to what’s in the house at that time! Feel free to substitute the chicken for pulled pork, make it vegetarian by using halloumi or chickpeas and garnish with your favourite salad items.
EQUIPMENT
Frying pan, paella pan or large skillet

Ingredients
4 chicken breasts (either chilled or pre-cooked)
4 tbsp chutney (we enjoy mango)
3 tbsp honey
1 red onion, thinly sliced
1 bag of fresh rocket
200g feta cheese, cubed
1 pot of tzatziki
1 tbsp olive oil
4-5 flatbreads (one per person)
lemon or lime juice (fresh or bottled)
salt and pepper
METHOD
Begin by cooking the chicken - using the methods you have available. Grill the breasts on the barbecue or over fire, or fry using a little olive oil in a skillet or large frying pan. You can also boil them. Once cooked and no pink meat can be seen, slice thinly or cut into cubes. Feel free to cook in advance and heat through.
Add the chicken, chutney, honey and a little extra oil to the frying pan and gently warm through, stirring to coat the chicken. Add a little water if you prefer a runnier sauce.
Lay out each flatbread on a plate and place a handful of rocket on each, followed by the honey chicken then the red onion and feta.
Drizzle over the tzatziki and lime juice then season to taste with salt and pepper.
Serve immediately.
