Spiced Chutney

An absolute staple in our house and really versatile - use this delicious chutney in anything from pasta sauces and one pot meals to cheese boards, sandwiches and salads.

This easy recipe will make enough to fill one 500g jar.

Ingredients

  • 1 tbsp coconut oil

  • 2 fresh apricots, finely chopped

  • 1 medium sized apple, finely chopped

  • 1 onion, finely chopped

  • 1 clove garlic, finely chopped or crushed

  • 5cm piece of fresh ginger, grated

  • 50g dates, roughly chopped

  • 1 tbsp curry powder

  • 1 tsp nigella seeds

  • 1/2 tsp ground sweet cinnamon

  • juice of 1 lime

  • 8 tbsp apple cider vinegar

  • 2 tbsp soft brown sugar

Method

  1. Place all the ingredients in a large pan and heat on the hob over a very low heat

  2. Keep stirring the chutney until the ingredients have softened

  3. If the chutney looks a little too thick, add another tablespoon of apple cider vinegar

  4. Once cooked, pour the chutney into a sterilised jar and allow to cool

  5. Store in the refrigerator.
