Mango + Honey Yoghurt Popsicles

At last summer has finally arrived and the idea of an icy cool snack fills our household with total happiness! I’m very much a fan of fruit and creamy ice lollies so I wanted to combine these into something everyone will love. The mango makes me dream of tropical beaches and the honey adds that touch of sweetness to the natural yoghurt and biscuit crumb base.

You’ll need a 10 holed silicone popsicle mould and 10 lolly sticks for this recipe. You can find these online, I bought mine from Amazon.

The beauty of this recipe is that you can substitute the mango for any fruit you’d prefer - why not try berries or kiwi?

And if you’re following a vegan or dairy free diet substitute the natural yoghurt and honey for coconut yoghurt to keep that tropical taste and use Biscoff cookies instead of Rich Teas.

Mango + Honey Yoghurt Popsicles

Servings: 10

Ingredients:

  • 500g fresh or frozen mango

  • 500g full fat natural yoghurt

  • 2 tbsp honey

  • 2 crushed biscuits of your choice (I used Rich Tea)

Instructions:

  1. If using frozen mango allow to defrost

  2. Cut mango into small chunks and add to a food processor or blender

  3. Blend until a puree state has been reached

  4. Pour equally into a 10 hole silicone popsicle mould

  5. Combine the yoghurt and honey

  6. Add this to the mould on top of the mango

  7. Crumble biscuit pieces on top

  8. Place the lid on top and insert the sticks

  9. Freeze for at least 7 hours or until solid
