Cherry Scones

Cherry season is in full swing and the berries are ripe, red and juicy! So what better way to make use of this beautiful fruit than to pop them in a super soft scone? Perfect with a cup of tea in the afternoon, these scones are covered in a cherry glaze so no need to add jam - just a little salted butter will make these sing!

Cherry Scones

Servings: 8

Ingredients:

Scones

  • 260g self raising flour

  • 50g butter at room temperature

  • 50g golden caster sugar

  • pinch of salt

  • 75g cherries (around 10)

  • 150ml milk, I used almond for flavour but any will do

Glaze

  • 100g icing sugar

  • 10 cherries

  • 2 tbsp water

Instructions:

  1. Preheat the oven to 180 degrees C fan and line a large baking tray with greaseproof paper

  2. Measure out the butter and flour in a large bowl and gently mix together with your fingertips until you reach a breadcrumb texture

  3. Add the sugar, salt and cherries and gently mix

  4. Add the milk a little at a time and combine using a knife. You may not need all of the 150ml so keep an eye on the texture of the mix. 5. Add more flour if it looks too wet then turn out onto a floured surface and mould into a dough

  5. Place the dough onto the baking tray and gently press out into a wide circle shape, around 1 inch deep - I prefer to use my hands for this to keep the rustic look

  6. Cut into 8 sections

  7. Bake for 20 minutes

  8. Remove from the oven and leave to cool

  9. While the scones are cooling make your glaze by adding your fruit to a blender along with a little water for approximately 30 seconds

  10. Once fully pureed pour through a seive over a bowl, using a spoon to assist if needed

  11. Add a little fruit puree at a time to the icing sugar until a thick and creamy texture is reached. Usually 2-3 tsp is perfect

  12. Drizzle liberally over the scones
