Rocky Road
Fancy an easy to make weekend treat? Then here’s the answer! Do you know what I love the most about Rocky Road? How you can add almost anything you have available in the cupboard and you still end up with the most delicious sweet.
It’s the combination of textures that make these no bake bars so irresistible. In these I used marshmallow for that gooey softness, shredded coconut and biscuit for the crunch and dried fruit for the burst of flavour.
You’ll notice I’ve used butter for added silkiness but you don’t have to - chocolate on its own will also be great.
And if you’re not into dairy, simply replace the chocolate and biscuits with vegan alternatives and ditch the butter or also use a vegan substitute.

Rocky Road

Ingredients:
125g butter
250g dark chocolate
250g milk chocolate
50g broken biscuits (I used Malted Milk)
40g mini marshmallows
50g dried fruit mix
20g shredded coconut
60g glace cherry
50g white chocolate
Instructions:
Line a 20x20cm deep baking/brownie tray
Melt the butter, dark and milk chocoltae together in a pan over a low heat, stirring continually.
Remove from heat before fully melted and continue to stir to melt the remaining chocolate chunks
Add the biscuits, dried fruit, cherries, coconut and marshmallows to the melted chocolate and butter and fully combine
Pour the mix into the lined tray and place in the fridge to chill
Once set, melt the white chocolate and drizzle over the top of the Rocky Road
Slice or break into rough squares and enjoy!
